Veggie curry

On medium heat, melt coconut oil, then add ginger and turmeric.

Add the onion and minced garlic, then the curry powder and paprika.

Once the mix becomes aromatic, add chopped pumpkin and sweet potato, then stir for 5 minutes.

Add zucchini at this stage and stir for additional 5 min.

Add nutmeg and stir.

When ingredients get softer, turn to a very low heat, then add coconut milk.

Mix well.

Leave for 25 min or so, stir from time to time, and add water or organic vegetable stock if mixture gets dry.

When ingredients get really soft, remove 1/2 cup of coconut milk from the pan and mix it with the peanut butter, then reintroduce it to pan.

Add curcumin and extra curry, depending on preference and taste.

Serve with Basmati rice or preferably brown rice.
