Pumpkin soup
This pumpkin soup is an excellent recipe example to help boost the immune system. It contains carbohydrates rich in fiber to keep you satisfied for a long period without spiking the insulin levels. Rich in anti-inflammatory ingredients like turmeric, ginger and cinnamon, the soup helps to reduce chronic inflammation. In addition to beta-carotene, pumpkins offer vitamin C, vitamin E, iron, and folate — all of which strengthen your immune system. Sweet potatoes are rich in carotenoids, which are antioxidants that help protect your cells from damage. This dish can help your immune cells work better to ward off germs and speed up healing.

In a soup pan, melt coconut oil, then add the sliced onion.

Once the onion is softened and minced, add garlic, ginger, and turmeric.

When the mix becomes aromatic, add chopped carrot, then the pumpkin and sweet potato; stir for a few minutes.

Add water/stock and bay leaf and cover for about 45 min on low heat.

When ingredients become soft, use a hand mixer to blend them all in the bowl - I like to keep little chunks in the mix.

Add coconut milk to the soup.

Mix well.

Add curcumin, depending on preference and taste.

Garnish with croutons!
