Shakshouka

Shakshouka is one of my favorite egg recipes!
Try this simple nutritious and quick recipe made with fresh tomatoes, parsley, garlic, and a hint of spice. Perfect as a quick lunch or brunch at home.
This meal is packed with essential vitamins, minerals, and antioxidants to keep you feeling your best.

Ingredients

Instructions

  1. Add the diced onions to a little bit of olive oil in a pan.

  2. Stir until it turns golden.

  3. Add the smashed garlic, then stir for two minutes.

  4. Add the tomatoes and bell peppers, then stir until the tomatoes are cooked.

  5. Sprinkle spices, paprika, cinnamon, cumin, black pepper and salt.

  6. Give it a stir, and pulp it a bit using a wooden utensil.

  7. Make some space in the pan for two holes or more, depending on the number of eggs.

  8. Crack the eggs in their respective holes.

  9. Keep the lid on for an additional five minutes until the eggs are well cooked.

Note

I usually sprinkle extra cinnamon and some salt on the eggs.

Brighten the dish by topping it with some zesty greens.

Serve immediately.
